I would like to use two BNO055s on a sailboat. One on the hull to measure vessel heading and attitude, and one on the mast to measure mast rotation.

What would be the best mode to acomplish this? I was initially thinking COMPASS mode and just compare the headings.
How much accuracy can I expect? Will drift be a problem? Will the sesors drift in different ways?
Is there a good way to handle calibration?

You could use NDOF mode, which has calibration algorithm running in the background.
