Yes, it is possible. But the official BME688 software supports the BME688 dev kit. You have to modify the official software by yourself to support Adafruit BME688 board when your record sensor data, and generate data formats supported by BME AI Studio. And when you use the BME688 dev kit, the software for recording data is ready-made and does not require any modifications.
We suggest that you use the BME688 dev kit to record data, train gases, and use hardware from a single sensor (such as Adafruit BME688) to detect gases.

I have an article and python code for this on github here: https://github.com/mcalisterkm/teach-your-pi-to-sniff-with-bme688.
The code includes sample data and the model to try out on your Raspberry PI. As to collecting data on a PI/single sensor board, well I suggest you buy the Bosch dev board which has 8 sensors and is designed for data collection.

There was no official BME688 configuration file for coffee detection.
You can do actual testing or refer to kmca's sharing.
